Instructions: Soak 8 bamboo skewers in hot water 1-3 hours. Rinse chicken and pat dry.
Cut lengthwise in strips. For marinade combine remaining ingredients, except peanut sauce, in a plastic bag. Add chicken. Seal bag and marinate in refrigerator 2 hours. Drain chicken, discarding marinade. Loosely thread chicken strips accordion-style onto skewers. Grill directly over medium hot coals 5-7 minutes or till chicken is tender and no longer pink.
