Instructions: Mix the three dry ingredients together. Rub 1 tablespoon of the spice mixture onto the chicken. In a skillet, warm the oil and add the chicken. Saute for 2 to 3 minutes per side.
Transfer the chicken to a plate. Add the broth, vinegar and the remaining spice mixture to the skillet and bring to a boil. Boil for 1 to 2 minutes. Return chicken to the skillet. Add the tomatoes, corn and chilies and bring to a simmer. Continue simmering for about 5 minutes, or until the chicken is cooked through. Serve with lime wedges. This recipe yields 4 servings.
