Instructions: Melt butter in large frying pan and saute scallions for 2 minutes. Add shrimp and cook 2 more minutes; stir constantly. Add rice and cook until warmed, turning often. Add spices and soy sauce. Stir well.
Beat eggs and pour over the top. Stir mixture until eggs are set, about 1 minute. Turn onto serving platter. May be garnished with scallion greens or extra shrimp. Email this Recipe:
