Instructions: Preheat oven to 350 degrees. Grease and flour a 9-by-5 loaf pan. Sift together the first 8 ingredients. Set aside. In a medium-sized bowl beat eggs, then add in the following order: brown sugar, oil and vanilla, mixing well after each.
Stir into the sugar mixture in the following order: tomatoes, flour mixture, walnuts and raisins. Turn batter into prepared pan. Bake for 65 minutes or until wooden pick inserted in the center comes out clean. Cool in pan 5 minutes, then turn out on a wire rack to cool completely. Makes 1 loaf. Mom Says: I made this bread last week and it was great. If anyone has some extra green tomatos on hand I would recommend this bread, its similar to zucchini bread. Email this Recipe:
