HEAT oil in a wok and fry mustard seeds, fenugreek seeds, dried chillies and curry leaves until fragrant for 1 minute. Add ginger and garlic, fry for 1 to 2 minutes. Add beans and chopped chilli and fry for 5 minutes. Stir in coconut milk and cook for 5 to 6 minutes. Add seasoning and cook until most of the liquid has evaporated.
