Amount Ingredient
2 can black beans - (15 oz ea) undrained
2 x jalapeno peppers chopped
(for less heat, remove the seeds)
2 x garlic cloves chopped
1 cup chopped seeded unpeeled tomatoes
1/4 cup chopped red onion
2 tbl minced fresh cilantro
Juice of one lime
Salt to taste
Instructions:
Instructions: Drain beans, reserving 1/4 cup of the liquid. Add beans, reserved juice, jalapenos, garlic, salt and pepper to food processor bowl or blender. Process until smooth. Spoon into a serving bowl.

Combine tomato, red onion, cilantro and lime juice; stir well and spoon over bean mixture. Serve with baked tortilla or pita chips.

This recipe yields 3 cups.
