Ingredients:

4 tbl Sunflower oil
3 tbl Cumin seeds
2 x Onions, diced
5 x Cm, (2 inch) piece root ginger, grated
2 x Red chillies, finely chopped
250 gm Okra, sliced into 1cm (1/2 inch) pieces (8oz)
2 tbl Fresh coriander leaves, torn
1 tbl Fresh mint leaves, torn
3 x Tomatoes, chopped into 8
Instructions:
Instructions: Heat the sunflower oil in a large pan over a moderate heat.

Add the cumin seeds and gently brown.

Add the chopped onion and cook for 2-3 minutes until softened.

Stir in the ginger and chillies.

Add the okra to the pan, ensuring all pieces are lightly coated with oil.

Gently mix all the ingredients, and cook for 5-6 minutes, turning occasionally.

Add the coriander, mint, tomatoes and seasoning. Stir well and cook for a further 4-5 minutes.

Serve immediately.

NOTES : A spicy vegetable dish, excellent served with lamb.
