Ingredients:

450 ml honey
400 ml white wine vinegar
1 sm bunch fresh coriander
1 tsp english mustard
150 ml sesame
1 pch each of the following:
ground coriander
ground ginger
ground cumin
ground turmeric
ground fivespice
ground cloves
curry powder
ground caraway seeds
ground fennel seeds
ground black pepper
ground cardamom
ground star anise
1 lt demi glace (qv)
1 x tpsn red chilli pepper diced
Instructions:
Instructions: In a saucepan reduce the honey and vinegar to a caramel.

Add the fresh coriander mustard and oil.

Add all the spices and simmer for 1 minute.

Remove from the heat and leave to cool and infuse.

In a separate pan bring the demiglace to the boil then pour over the spice mixture.

Leave to cool and when cold pass through a fine sieve When needed reheat the sauce and add the chilli and shallot.

Serves 4
