Instructions: Peel peaches by immersing them in boiling water a couple of minutes. Slip off peels when cool enough to handle. Halve, pit and coarsely chop. Place in a large saucepan (enamel, nonstick or glass) with vinegar, brown sugar, raisins, onion, garlic, spices, salt and red pepper. Bring to a boil. Reduce heat to low and simmer, uncovered, 45-60 minutes or until thickened, stirring often. Serve as a condiment with chicken, turkey, pork or ham. Wonderful on crackers along with havarti, brie or Port Salut cheese.
