Instructions: Combine breadcrumbs, cilantro, lime rind, garlic powder, pepper, and red pepper in a heavy-duty, zip-top plastic bag. Seal bag; shake well. Combine milk, peanut butter, and coconut extract in a bowl, stirring with a wire whisk until blended. Brush chicken with milk mixture; add chicken to breadcrumb mixture in bag. Seal bag; shake until chicken is coated.
