Ingredients:

2 tbl creamed coconut
4 tbl milk
1/2 sm onion chopped
1 clv garlic minced
4 tbl smooth peanut butter 1 teaspoon soft brown sugar
7 tsp soy sauce
1/2 tsp ground cumin 1/2 teaspoon chili powder
Instructions:
Instructions: Chop the creamed coconut and place in a small pan with the milk.

Heat gently for about 2 minutes stirring constantly until the coconut melts and forms a paste with the milk. Transfer the coconut mixture to a blender or food processor and add all the remaining ingredients.

Process until smooth then transfer into a small bowl.

Cover and set aside until required.

Make this rich spicy dressing in advance to allow the flavors to develop before using. It is the perfect dressing for the Indonesian vegetable salad Gado Gado but is also delicious with grilled chicken fish. or shellfish.

Makes about 1/2 cup
