Ingredients:

5 med Potatoes
1 x 3/4" piece ginger, diced
5 tbl Vegetable oil
1 tsp Black mustard seeds
1/2 tsp Cumin seeds, whole
1 pch Asafetida
2 x Fresh green chiles, chopped
1/2 tsp Coriander, groun
1/4 tsp Turmeric
1/2 tsp Cayenne
1/2 tsp Lemon juice
1 tsp Salt
Instructions:
Instructions: Boil potatoes, allow to cool & peel them. Break them by hand into 1/2" pieces.

Heat oil in a wok & when hot add mustard seeds. When they begin to pop, add cumin seeds & asafetida. Add ginger & chiles. Stir for a few seconds until the ginger is lightly browned. Add coriander, turmeric & cayenne. Stir once & add broken potatoes. Stir & fry for 1 minute. Add 1/2 cup water. Lower heat & mix gently for 30 seconds. Add lemon juice, salt & garam masala. Stir gently & cook for 1 minute.
