Instructions: Boil potatoes, allow to cool & peel them. Break them by hand into 1/2" pieces.
Heat oil in a wok & when hot add mustard seeds. When they begin to pop, add cumin seeds & asafetida. Add ginger & chiles. Stir for a few seconds until the ginger is lightly browned. Add coriander, turmeric & cayenne. Stir once & add broken potatoes. Stir & fry for 1 minute. Add 1/2 cup water. Lower heat & mix gently for 30 seconds. Add lemon juice, salt & garam masala.
