Ingredients:

2 tbl Vegetable oil
400 gm Frozen large prawns, defrosted & drained
1 tsp Sea salt
1/2 tsp Black peppercorns, crushed
1/2 tsp Sugar
2 tsp Grated root ginger
2 x Cloves garlic, finely chopped
2 tbl Finely chopped spring onions
1 x Birds (1-2) eye chillies, deseeded fine choppd
213 gm Can chopped tomatoes
Instructions:
Instructions: 1. Heat half the oil in a wok. Stir fry the prawns for 1 minute. Remove from the pan.

2. Add the remaining oil, the salt, pepper and sugar and stir for 15 seconds. Add the ginger, garlic, spring onions and chillies and stir fry for a further 15 secs.

3. Add the tomatoes, then fill the can with water and add to the pan, stirring the cornflour into the last 2 tbsp until smooth. Stir into the pan for 5 minutes.

4. Stir in the prawns and simmer for 2-3 minutes. Serve with Basmati rice.

NOTES : Speedy stir-fry.
