Amount	Ingredient
4 lrg	Fresh tomatoes peeled, seeded,
	and finely chopped
1 tbl	Seeded, finely-chopped fresh jalapeno
	chiles
2 tbl	Finely-chopped cilantro
1 sm	Red onion finely chopped
1 med	Garlic clove minced
1 tsp	Red wine vinegar
	(or 1 tspn freshly-squeezed lemon juice)

Instructions:

Instructions: Combine all ingredients in a medium bowl and mix well. Taste for seasoning. Cover and refrigerate.

This recipe yields about 1 quart.
