1/2 lb cooked halibut
4 x Kaiser rolls
4 lrg lettuce leaves
4 lrg tomato slices
----------------- SPICY REMOULADE SAUCE ----------------
1/3 cup mayonnaise or reduced-fat mayonnaise
1 x green onion minced
1 tbl minced parsley
1 tbl minced cornichons or dill pickle
1 tbl minced capers
2 tsp minced fresh tarragon
2 tsp fresh lemon juice
1/2 tsp Dijon mustard
1 tsp prepared horseradish
1 x garlic clove minced or pressed
Instructions:
Instructions: Seafood Alternatives: cod, salmon, shrimp To make the spicy remoulade sauce, stir all the ingredients together in a small bowl.

Break the fish into 1/2- to 1-inch pieces, discarding any skin or bones, and put it in a medium bowl. Add the remoulade sauce and gently stir to mix.

Halve the kaiser rolls and lightly toast the cut sides. Layer the lettuce, tomato and 1/4 of the fish mixture in each roll.

This recipe yields 4 servings.

Comments: A cross between traditional French and spicy New Orleans remoulade, this sauce is a nice alternative to tartar. Make it as mild or spicy as you like!
