Instructions: Bring rice and 1 1/2 cups water to a boil; cover, reduce heat and simmer 20 minutes until water is absorbed.
Saute onions, celery and carrot in reserved hot drippings over medium-high heat 3 minutes or until tender. Add peas and saute 3 minutes. Stir in rice, remaining 1/2 cup water, bacon and seasonings and cook 5 minutes or until thoroughly heated. Serve immediately. This recipe yields 4 servings. Email this Recipe:
