Instructions: Place potatoes in a bowl. Set aside. In a small frying pan, heat oil; add garlic and let it brown. Toss in cumin seeds and let it sizzle. Finally, add chilies. Remove from heat. Mix in the lime juice, salt and sugar. Pour over potatoes. Combine well. Bake for 30 minutes at 350 degrees. Sprinkle cilantro leaves and coconut over potatoes just before serving.
