For spicy mayonnaise: ----------------
1/2 cup mayonnaise (or more as needed)
Sambal to taste (a Southeast Asian red-chile condiment found in Asian markets)
Pickled ginger juice to taste (available at Asian markets)

1 lb tuna (sushi quality) in four (4-ounce) blocks
Cajun seasoning to taste
2 tsp olive oil
8 oz daikon, shredded, or substitute zucchini, jicama or red radishes
Instructions:
Instructions: For spicy mayonnaise: Mix all ingredients together thoroughly. Set aside.

For ahi: Season ahi blocks with Cajun seasoning. Heat olive oil in a saute pan until very hot. Sear tuna in the oil, cooking quickly on both sides

(approximately 30 seconds on each of four sides) so it is evenly browned on the outside and rare on the inside.

Slice seared blocks into five pieces each and lay over the shredded daikon.

Drizzle with spicy mayonnaise and garnish with lemon slices.
