4 lb Short Ribs Well Trimmed, 2 1/2 Wide
3/4 cup Onion, Chopped Coarsely
4 x Cloves Garlic, Quartered
3 x Jalapeno Peppers, Seeded & Chopped
2 tbl All Spice
1 tbl Ginger, Minced
2 tbl Veg Oil
1 tsp Fresh Grated Nutmeg
1 tsp Salt
Instructions:
Instructions: In food processor combine onion, garlic, jalapeno peppers, allspice, ginger, oil, nutmeg and salt. Puree. Put mixture into bowl and lay the short ribs down , dice cut the 2 1/2 in short rib cubes as follows. Cut halfway to bone every 1/2 inch deep. Combine ribs with marinade, cover and marinate 4-5 hour in refrigerator. Preheat grill 5 minutes. place short ribs on grill bone sid down. Cook 4-5 minutes, turning three times during cooking time. May take longer than the 4-5 minutes, Brown on all sides.
