Instructions: 1. In a small bowl with kitchen shears snip parsley and set aside. Drain roasted peppers very well, place in a small bowl, snip the peppers into small pieces. In a medium bowl, place the bulk sausage, add the parsley and roasted peppers, with your hands or a wooden spoon mix well. Add the minced garlic and mix well again. You are now ready to prepare the steak rolls. Set the oven to 325 degrees .
2. You will need a large glass baking dish with a cover. Place a generous spoonful of sausage mixture on each of the steaks and roll up from one end to the other. Tie a piece of string around each end of the steak roll to keep in place. If some of the mixture leaks out just push it back in with your fingers. 3. Now take a shallow dish, place approximately 1 cup of flour, some salt and pepper, and mix well. Take each steak roll and dredge them on all sides in the flour. Place them on a plate. 4. In a nonstick frying pan over medium heat, add approximately 2 to 4 tablespoons of butter, when the butter is hot add the steak rolls and brown on all sides. 5. In the casserole dish add the wine, gently place the browned steak rolls in the dish, you may add a piece of roasted pepper to the top of each steak roll for garnish. Cover the dish and place in the oven for 1 hour. Be sure to let the steak rolls "sit" for 3 to 5 minutes before serving. Remove string and garnish with parsley and roasted red pepper, if desired.
