Instructions: Heat a wok or large fryingpan over a high heat until it is hot. Add the oil and then the ginger spring onions and garlic. Stir fry for about 20 seconds. Then add the mushrooms and Stir fry them for about 30 seconds. Quickly add the rest of the ingredients except the sesame oil. Continue to Stir fry for about 5 minutes or until the mushrooms are cooked through and have absorbed all the spices and seasonings. Just before serving add the sesame oil and give the mixture a couple of quick stirs. Turn it onto a warm serving dish and serve at once.
Serve with Braised Duck and plain steamed rice. It also goes perfectly with English grills. Although button mushrooms are common in Europe and America they were virtually unknown in China until quite recently. They are now increasingly popular there.
