Instructions: In medium saucepan, cook sweet potatoes 1/2 hour or until tender. Cool, peel, and mash in electric mixer or by hand with potato masher. Put 1/2 the sweet potatoes into a 1 1/2 quart buttered casserole. Spread with mincemeat and top with remaining half of potatoes. Bake at 350 degrees for 45 minutes. Garnish with whipped pecans, grated orange and lemon peel.
