Instructions: 1. Drain as much water/oil from tuna as possible. Heat oil in a pan and saute the onion on medium heat, until onion is translucent - about a minute or two. Add tuna, chilli sauce and salt and cook for a couple of minutes.
2. Take pan off the heat and cool for a few minutes before adding lime juice, sliced chillies, coriander and kaffir lime. 3. Sandwich with garnish of coarsely shredded crisp lettuce, pea shoots, raw onion slices and tomatoes. I have a pet hate for bland, mushy, tuna salad fillings. This bright, bold version contains some of my favourite flavours - coriander, kaffir lime and chillies! Ive taken a cross cultural leap by filling this in a ciabatta, though I think it goes well with almost any kind of bread or rolls - even regular sliced sandwich bread.
