2 pkt frozen chopped spinach (10 oz. ea.)
1/4 cup butter
1/2 cup finely chopped onion
1 sm clove garlic minced
1 can artichoke hearts (14 1/2 oz.) drained and cut into quarters
1 ctn sour cream (16-ounce)
1/4 tsp salt
1/4 tsp black pepper
Instructions:
Instructions: Cook spinach according to package directions. Drain well, pressing out as much water as possible. Set aside. In a large skillet, melt butter and saute onions until tender. Add garlic and cook until fragrant. Add spinach, artichoke hearts, sour cream, salt and pepper. Gently fold to combine and stir in 1/4 cup Parmesan cheese. Spoon into lightly greased 13x9-inch baking dish and sprinkle with remaining Parmesan cheese. Bake at 350 degrees for about 30 minutes.
