1 cup flour, plain
90 gm butter
1 x egg yolks
1/10 tsp salt
1 x jui lemon

20 gm butter
4 slc bacon, diced
1 x onions, medium
1 cup spinach, frozen
3 x eggs
200 gm cream
125 gm feta cheese

Sift flour and salt into a bowl, rub in butter, add egg yolk and lemon juice and mix to a firm dough. Cover and refrigerate 20 minutes. Roll dough out large enough to line a 25cm flan tin, trim the edges. Cover pastry with greaseproof paper and fill with dried beans or rice to hold in shape while cooking. Bake in a moderate oven for 7 minutes, remove paper and beans and bake a furthur 7 minutes. Set aside until required.

Whisk eggs and cream together and set aside.

Chop spinach leaves finely.

Finely slice onion.

Melt butter in a pan and cook onion and bacon for 2 minutes until tender.

Spread spinach, onion and bacon evenly over pastry, top with crumbled feta cheese. Pour over egg mixture and sprinkle with parmesan cheese.

Bake in a moderate oven for about 30 minutes or until set.
