1 lb Lean ground turkey
1 pkt (9-oz) frozen spinach, thawed, well drained
1/4 cup Plain bread crumbs
1/4 cup Finely chopped onion
1/2 tsp Garlic powder
1/2 tsp Salt, if desired
1/4 cup Refrigerated or frozen fat-free egg product thawed

Instructions: Heres a really delicious meatball recipe. Its from the Jan/Feb 1998 issue of "Fast and Healthy" magazine. We dont always use the mustard dip, but just serve them over some buttered pasta.

1. In medium bowl, combine turkey, spinach, bread crumbs, onion, garlic powder, salt, egg product and 2 Tbls. of the mustard-mayonnaise sauce; mix well. Shape into about 45 (1-inch) balls.

2. Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add spinach balls; cover and cook 8 to 10 minutes or until spinach balls are firm and centers are no longer pink, turning occasionally. Keep warm.

3. Pour remaining mustard-mayonnaise sauce into small microwave-safe serving bowl. Microwave on HIGH for 1 1/2 to 2 minutes or until thoroughly heated. Stir sauce. Serve hot spinach balls with sauce.
