Ingredients:

2 x 10 oz. pkgs. frozen chopped spinach
2 cup herbed stuffing mix, crushed
1 cup firmly packed freshly grated Parmesan
1/2 cup butter, melted
4 x green onions, chopped fine
3 x eggs
----------------- MUSTARD SAUCE: ----------------
1/2 cup dry mustard
1/2 cup white vinegar
1/4 cup sugar
Instructions:
Instructions: Combine all ingredients, mix well. Shape in 1" balls (makes about 70). Refrigerate or freeze till ready to bake. Preheat oven to 350. Set spinach balls on ungreased cookie sheet, bake till golden brown, about 10-15 minutes. Serve with mustard sauce.

MUSTARD SAUCE:
Combine mustard and vinegar in a small bowl, cover and let stand at room temperature for 4 hours. Mix sugar and egg in saucepan. Add mustard mixture. Cook over low heat, stirring constantly, till slightly thickened. Cover and chill. Serve at room temperature.
