sag bhajee
450 gm fresh or frozen spinach
1 tbl sunflower oil
1 sm onion cut into long thin slices
1 sm clv garlic finely chopped#
salt
knob of ghee
1/2 tsp cumin seeds
Instructions:
Instructions: Wash fresh spinach several times to clean and chop into strips discarding any tough stalks. Boil (or steam) until tender using only the water remaining on the leaves after washing. Heat oil in frying pan medium to hot and fry cumin seeds for 2 minutes.

Add onion and garlic ann fry until golden.

Add garam masala and stir in well.

Fry for about 5 minutes.

Add drained spinach to the frying pan mixture add a knob of ghee and fry gently for 5 minutes.

Salt to taste.

Serves 4
