10 oz BIRDS EYE Chopped Spinach cooked according to
package directions
and cooled
4 oz Feta cheese crumbled
1 x egg
1/2 tsp parsley
1/4 tsp tarragon
1/8 x black pepper
8 oz refrigerated Phyllo pastry
Instructions:
Instructions: Drain spinach; squeeze out excess liquid until dry.

In medium bowl, combine spinach, cheese, egg, parsley, tarragon and pepper; mix thoroughly with fork.

Unroll phyllo dough; keeping layers together, cut dough in half and trim to form squares; keep covered with a damp towel.

To assemble, peel off one square sheet, place on a flat surface and spray with cooking spray. Repeat with 3 more sheets, placing one on top of another.

Place one tablespoon of filling in center. Roll up by folding one edge of dough over spinach cheese mixture; fold in sides and roll tightly. Place seam side down on plate. Repeat with remaining phyllo sheets and filling.

Place on baking sheet seam side down and bake in preheated 350 F oven for 30 minutes or until pastry is golden brown.

Makes about 18 appetizers.
