3 tbl olive oil
1 bn green onions sliced
4 x plum tomatoes chopped
1 x red bell pepper chopped
6 x oil-packed sun-dried tomatoes drained, chopped
2 x garlic cloves minced
1/4 tsp dried oregano crumbled
1 tbl chopped fresh parsley
1 tbl chopped fresh basil or 1 teaspoon dried crumbled
Salt and pepper
8 oz spinach linguine or spaghetti freshly cooked
Instructions:
Instructions: Heat oil in heavy large skillet over medium heat. Add next 6 ingredients and saute until onions are tender, about 15 minutes. Stir in parsley and basil. Season with salt and pepper. Add pasta; toss thoroughly. Divide pasta between 2 plates. Top each with half of goat cheese.

Serves 2.
