Ingredients:

Amount	Ingredient
1 can	(10 1/2 oz) Mandarin oranges, drained
6 cup	Spinach or other greens, torn in bite-size pieces
1 sm	Cucumber, thinly sliced
1 x	Avocado, peeled and sliced, optional
2 tbl	Green onions, sliced
	----------------- DRESSING ----------------
1/2 tsp	Grated orange peel
1/4 cup	Orange juice
1/4 cup	Oil
2 tbl	Sugar
2 tbl	Wine vinegar
1 tbl	Lemon juice

Instructions:

Instructions: Combine ingredients for dressing in a covered container and shake. Combine remaining ingredients in a bowl, add dressing, toss lightly.

Serves 8.
