Ingredients:

1 cup Shredded Cheddar cheese
3/4 cup Flour
1/2 tsp Salt
1/4 tsp Dry mustard
1/4 cup Melted margarine
1 pkt Chopped spinach
1/2 cup Milk
1/2 cup Half and half or evaporated skim milk
1/2 cup Finely chopped onion
1/4 cup Chopped mushrooms
1 tsp Salt
1/4 tsp Nutmeg
Instructions:
Instructions: Mix well: Cheddar cheese, flour, salt, dry mustard and margarine. Pat into 9" pie pan. Filling: Cook spinach and drain well. Add milk, half and half, onion, mushrooms, salt and nutmeg. Beat eggs. Add part of eggs to spinach.

Mix well. Add rest of eggs. Pour into prepared 9" pie crust. Bake at 400 F. for 15 minutes. Reduce heat to 325 F. and bake for 20-25 minutes more.
