2 x eggs
1/2 cup olive oil
1 cup milk
1 tsp salt
3 cup all-purpose unbleached flour
----------------- FILLING ----------------
20 oz frozen chopped spinach
thawed and squeezed dry
3/4 cup chopped parsley
6 x scallions, up to 8
green part only
2 tbl chopped fresh mint
Freshly ground black pepper
2 cup feta
----------------- TOPPING ----------------
1 x egg yolk for brushing crust

Instructions: Makes 12 pies. OVO LACTO

The taste is a surprise if you expect the familiar cheese-laden pies. The addition of mint gives them a refreshing boost of flavor.

DOUGH: In mixer bowl, place eggs, oil, milk, salt and 2 cups flour. Knead on medium speed adding flour from reserved third cup until the dough is smooth and no longer stuck to the sides of the bowl. (If you dont have a dough mixer, mix dough with a wooden fork or spoon.) Knead by hand on a floured surface for 4 to 5 minutes more. Cover dough with a dish towel and let rest until you have prepared filling.

FILLING: In large bowl, mix together all filling ingredients. Preheat oven to 350 degrees. Separate dough into golf-ball sized balls; roll out into 6-inch circles. Place about 3 tablespoons filling in middle of circle and close dough over, sealing it by pressing the edges with a fork. Repeat with each circle.

Brush pies with beaten egg and sprinkle with sesame seeds. Bake until lightly browned, about 20 minutes.

Makes 12 pies.
