1/4 cup	white vinegar
2 tsp	Dijon mustard
1 x	garlic clove minced
1/2 tsp	freshly-ground black pepper
2/3 cup	olive oil
1 pkt	crumbled blue cheese - (4 oz)
1 pkt	fresh spinach - (10 oz)
1/2 pkt	sliced fresh mushrooms - (8-oz pkg)
1 cup	grape or cherry tomatoes halved
1/2 sm	red onion thinly sliced

Instructions:

Instructions: Whisk together first 4 ingredients; gradually whisk in oil. Add cheese, and stir gently.

Combine spinach and next 3 ingredients; drizzle with dressing, tossing to coat. Sprinkle with Creole Croutons. Serve immediately.

This recipe yields 4 to 6 servings.
