1 cup heavy cream
3 x eggs
2 pkt frozen chopped spinach (10 oz ea) thawed, squeezed dry
1/3 cup grated Parmesan cheese
2 tbl all-purpose flour
1/8 tsp ground nutmeg
1/8 tsp ground red pepper
1/2 tsp salt
Instructions:
Instructions: Preheat the oven to 350 degrees. Coat an 8-inch square baking dish with nonstick cooking spray.

In a medium bowl, beat the heavy cream and eggs for 2 to 3 minutes, or until foamy. Add the remaining ingredients and mix well.

Pour into the baking dish and bake for 30 to 35 minutes, or until a knife inserted in the center comes out clean. Cut into squares and serve.

This recipe yields 4 servings.
