Instructions: Cook the spinach in the water for 5 minutes. Force it through a food mill.
Melt the butter in a saucepan and cook the onion in it for 5 minutes. Blend in the flour and gradually add the milk. Stir in the spinach, salt, pepper and nutmeg. Cook over low heat 15 minutes. Serves 6 to 8. Email this Recipe:
