Instructions: Pour melted butter into a 13 x 9-inch pan. In a bowl combine eggs, milk, flour, and baking powder; beat well. Add spinach and cheese; mix well. Pour into pan and combine with butter thoroughly. Bake at 350 degrees (F) for 35 minutes. Cool 5-10 mins and cut into squares.

Serves 6

Try Swiss cheese in place of the Monterey Jack.
