1 pkt fresh Spinach
Salt and freshly ground Black Pepper, to taste
2 x cloves Garlic, chopped
2 tbl Olive Oil
2 tbl fresh Parsley, chopped
1 can Black Olives, pitted and quartered
1/4 cup Parmesan Cheese, grated
1/4 cup Ricotta Cheese (optional)
1/2 cup Mozzarella Cheese, grated
Instructions:
Instructions: Rinse the spinach, then cook until soft in a lightly salted pot of boiling water. Drain and chop spinach. Add salt, pepper, garlic, oil, parsley, and olives to the spinach. Blend well. Add the cheeses and blend again.

Sprinkle oil on a rectangular baking pan. Spread out pizza dough to cover pan. Spread spinach filling on one side of dough lengthwise. Flip over dough to make a pocket and seal edges. Brush a bit of olive oil over the top. Bake in a pre-heated 325-F degree oven for 30 to 45 minutes. Serve warm.
