Ingredients:

2 tbl Peanut oil
1/2 lb Spinach
1 tbl (or 1 lb, depending) pepper flakes
1 tsp Sugar
1 tsp (id go for a Tbsp myself) garlic, minced
Instructions:
Instructions: Heat oil til smoking-hot. Add spinach and stir until wilted (bout a min.). Add the rest of the stuff and toss in pan/wok 30 second. serve immediately thereafter.

As an aside, id recommend this served over a bed of cold Basmati, or even Jasmine rice- garnish w/ mint.
