Instructions: Here are two recipes I tried sucessfully at our Passover Seder(Dinner).
Both come from the "Passover Treasures" recipe collection.The kugel(pudding) is a savory one and can be a side dish or an entree for a vegetarian. The "Ice Cream" can probably be made with other frozen fruits such as peaches. It made a huge amount so you may want to try only half a recipe at first. I filled a pie crust (made from matzo meal, of course )) with the ice cream and placed fresh strawberries on top just prior to serving. All but one family member enjoyed it; she commented, "Well, its NOT Baskin & Robbins!". See what you think! Saute onion, celery and mushrooms in margarine for 10 minutes, stirring often. Add all remaining ingredients.* Put into a 9x13 inch greased pan. Bake 40-45 minutes** at 350 degrees or until firm. Check baking time so it doesnt dry out. Cool a little before cutting.*** Note: * I used some of the reserved liquid to make mixture moister. It should have the consistency of a moist stuffing. ** I baked it 30 t0 35 minutes, because it was going to be reheated later. ***It was good as is (you have to like spinach, though), but I think that serving it with some good tomato sauce or a cheese sauce would be a nice touch.
