Ingredients:

Amount	Ingredient
2 box	frozen chopped spinach, drained
2 cup	Bread crumbs
6 x	Shallots, sliced
6 x	Eggs, beaten
3/4 cup	Melted butter
1/2 cup	Shredded cheese
1 tsp	Minced garlic
1/2 tsp	Thyme
1/2 tsp	Cayenne pepper
	Salt to taste

Instructions:

Instructions: Mix all ingredients in order listed except tomatoes. Take an ice cream scoop filled with mix & put on top of each tomato slice. Place on greased cookie sheet & bake for 20 minutes at 350.

Makes 12 servings.
