Instructions: Cook bacon on tray in oven intil crisp. Chop fine.
Trim and plunge snowpeas into boiling water until tender and bright green. Rinse under cold running water to cool and preserve color. Cut diagonally into 3cm lengths. Dice onion fine. Drain and rinse kidney beans. Just before serving: Trim and wash spinach and lettuce and in a large bowl, mix lightly with beans, herbs, garlic, oil and vinegar. Season well.
