2 cup cottage cheese
1 x 10-ounce package frozen chopped spinach, thawed and well drained
1/3 cup crumbled feta cheese
3 x eggs, beaten
1/4 cup butter or margarine
3 tbl all-purpose flour
2 tsp minced dried onion
Instructions:
Instructions: Grease a 1 1/2-quart casserole; set aside. In a large bowl, combine cottage cheese, spinach, feta cheese, eggs, butter, flour, onion, and nutmeg; mix well. Transfer mixture to the prepared casserole. Bake, uncovered, in a 350 degree F oven about 45 minutes or until center is almost set (an instant-read thermometer inserted in center should register 160 degrees F).

Makes 8 side-dish servings.

At eight servings, this double-cheese combo makes the perfect side dish for roasted meats or poultry, but you also can serve it as a hearty meatless main dish for four.
