Instructions: Bring the stock, water, and scallions to a boil in a pot. Add the pasta and bring the mixture back to a full boil. then reduce the heat to low, cover and boil gently for 5 minutes.
Add the spinach and mushrooms, mix well, bring back to a strong boil and boil for 1 minute. Add the chicken, separating the pieces, and the salt and pepper. Mix well and bring back to a boil.
