Instructions: Preheat oven to 350 degrees. Spray a medium sized pan with cooking spray; add spinach and cook, covered, over medium high heat until fully defrosted, about 5-7 minutes. Spray a baking pan (I use an 8 x 8 square pan) with cooking spray and spread spinach evenly in pan.
Pour beaten eggs over spinach and spread it around a little to coat the whole surface as best you can so it makes a kind of layer on top. Sprinkle shredded cheese on top as a third layer - as much or as little as you like. I used to use a ton of cheese in this recipe, but you can get away with much less - even a 1/4 cup is plenty. Sprinkle bread crumbs over the top - again as much or as little as you like - and spray the top with cooking spray. (It makes a tiny crust layer.) Bake in oven for about 30 minutes, until egg is set. Once egg is set and the cheese is slightly bubbly, put it under the broiler for 1-2 minutes. This will cook the top layer a little more, browning the cheese and bread crumbs.
