Instructions: In a pot, heat the oil and saute the onion and garlic until fragrant and translucent. Add the stock and bring to a boil. Reduce heat to medium low and add the orzo. Simmer for 10 minutes. Stir in the spinach and tomatoes. Simmer 5 minutes. Stir in the basil and pepper. Ladle into soup bowls and sprinkle with the Parmesan.
