Instructions: Rinse and stem three (10-ounce) packages of fresh spinach (dont dry it).
In a large pot, heat 1/4 cup olive oil over medium-high heat. Saute 2 to 3 tbsp chopped garlic just until golden, 3 to 4 minutes. Stir in spinach, 1/4 cup white wine or chicken broth and salt and pepper to taste. Reduce heat and simmer 5 to 6 minutes, stirring occasionally, until spinach wilts completely (do not overcook).
