1 tbl olive oil
3 tbl pine nuts (pignoli) or walnuts
1 sm onion chopped
3 x garlic cloves minced
1 bag fresh spinach - (10 oz)
1/3 cup currants or raisins
1/2 tsp salt
Instructions:
Instructions: In a large skillet, heat oil over medium heat. Add nuts and cook 2 minutes, or until light brown, stirring. Add onion and garlic; cook 3 minutes, or until softened, stirring occasionally.

Add spinach, currants, salt, and black pepper. Cover and simmer 5 minutes, or until spinach is wilted. Stir to combine.

This recipe yields 4 servings.

Comments: Toasting the pine nuts or walnuts in the oil really brings out their full, tasty goodness.
