Instructions: Remove stems and any blemished leaves from spinach; wash well in several changes of water; drain. Wipe mushrooms with a damp cloth; trim stem ends; cut through stems and caps into thin slices.
Heat oil in a large skillet; add onion, garlic, and mushrooms; stir-fry 3 minutes over medium-high heat. Add spinch; cook, turning and stirring gently, 2 to 3 minutes, or until spinach is wilted. Stir in lemon juice, salt, sugar, and nutmeg; cook 30 seconds. Serve immediately. Email this Recipe:
