Instructions: Beat egg whites with salt until they foam up. Then add sugar a little at a time and continue beating until stiff peaks form. In a separate bowl, beat egg yolks, lemon zest, lemon juice and vanilla. Mix a small amount of egg whites into egg yolk mixture, then pour remaining egg yolk mixture into egg whites and sprinkle flour on top. Gently fold in ingredients until you can no longer see egg whites but dont mix too much. Brush a 9-inch layer cake pan with butter and pour batter onto pan. Spread out batter and add cherries on top. Bake at 350 degrees for 35 - 40 minutes or until cake is golden brown.
